Peach Gum with Snow Lotus Seed Soup

Ingredients

20g Peach Gum

20g Snow Lotus Seed

10g White Fungus

5 Red Dates (seeded)

Brown Sugar to taste

Directions

  1. Soak the peach gum and the snow lotus seeds with water overnight. Remove impurities on the peach gum and rinse it, cut into smaller pieces if needed.
  2. Soak the white fungus with water for 30 minutes before cooking. Remove the roots and cut them into small pieces for later use.
  3. Put all ingredients into the Visions Flair 1.2L stewpot, add in water to fill 2/3 of the pot. Place the stewpot on the stove and bring it to a boil over high heat, then reduce into simmer for 3 hours at low heat or until thicken.
  4. Add brown sugar. Serve it hot or chilled.
