Peach Gum with Snow Lotus Seed Soup

Ingredients
20g Peach Gum
20g Snow Lotus Seed
10g White Fungus
5 Red Dates (seeded)
Brown Sugar to taste

Directions
- Soak the peach gum and the snow lotus seeds with water overnight. Remove impurities on the peach gum and rinse it, cut into smaller pieces if needed.
- Soak the white fungus with water for 30 minutes before cooking. Remove the roots and cut them into small pieces for later use.
- Put all ingredients into the Visions Flair 1.2L stewpot, add in water to fill 2/3 of the pot. Place the stewpot on the stove and bring it to a boil over high heat, then reduce into simmer for 3 hours at low heat or until thicken.
- Add brown sugar. Serve it hot or chilled.
