Braised Pig Trotters

Ingredients

3 pig trotters (1500g)

10g ginger

1 tbsp dark soy sauce

1 tbsp Chinese white wine

2 tbsp light soy sauce

100g sweet soybean paste (六必居黄酱)

50g rock sugar

1200ml water

1 tsp peppercorns

2 bay leaves

3g tangerine peel

2g cinnamon

3g galanga

2g of Chinese angelica

2 star anises

3 cloves

3 pods of white cardamom

Directions

  1. Stew pig trotters with clear water for 40 minutes. Rinse and drain before setting aside.
  2. Smash ginger by using the back of a knife. Set aside.
  3. Add sweet soybean paste, light soy sauce, dark soy sauce and Chinese white wine into a bowl. Stir well and set aside.
  4. To prepare the seasoning pouch, place peppercorns, bay leaves, tangerine peel, Chinese cinnamon, galanga, Chinese angelica, star anise, cloves and white cardamom into a pouch.
  5. Add stewed pig trotters, ginger, seasoning pouch, water, rock sugar and sauce into the Visions 3.5L Stockpot. and cover it. Turn the knob on the World Kitchen Smart Pot to the “Stew” function. Press the touch screen on the knob to start cooking. The time can be adjusted according to the amount of ingredients used or personal preference. The adjustable range is 1 to 12 hours.
    The default cooking time on this mode is 120 minutes, which is adjustable by pressing the “Timer” button.
  6. The cooking status will display on the screen with a red light on the knob.
  7. Remove the pig trotters once cooking is completed. Cut into smaller pieces and serve in Corelle dinnerware.
